The goal of the Canadian Shellfish Sanitation Program (CSSP) is to minimize the health risks associated with the consumption of contaminated shellfish such as mussels, oysters and clams by implementing controls to verify that only shellfish that meet food safety and quality standards reach domestic and international markets.

This course provides information to participants on the Canadian Shellfish Sanitation Program (CSSP), covering roles and responsibilities in delivering the Program and knowledge to assist inspectors on hazards specific to shellfish when conducting preventive control inspection.
