This online self-study course provides foundational knowledge of the E.coli O157 policy. Each self-study activity addresses a particular area of the policy related to a particular processing activity of raw beef production. The areas which will apply specifically to the establishment you inspect will depend on the type of processing your establishment perform. This module is a pre-requisite to the second module which is focussed on case studies and application.
